As you can tell, I love vegetables. I’m obsessed, you could say. I’d get in a real panic if I was served a meal without any (even breakfast – hello, carrot porridge!)
So I was delighted to host the #ExtraVeg blog linky, where bloggers from around the world were asked to submit their recipes that help you get extra vegetables into your diet, for Helen at Fuss Free Flavours and Michelle at Utterly Scrummy for the month of May. I love spring vegetables: the asparagus, broccoli, carrots, Jersey royal potatoes, peas, radishes and spinach are all piled high on the shelves at the farmer’s market and greengrocer.
One of the best things about hosting this linkup has been discovering new blogs that I hadn’t come across yet. There are so many creative and talented recipe developers working tirelessly at home, devising, writing and photographing such tempting and beautiful recipes. It’s always such a treat to find new (to me) blogs that have such passion and great recipes.

Wild Greens, Chickpea and Ricotta-Feta Borek from Kellie at Food to Glow.
This gorgeous meal is a crispy fat ‘cigar’ of healthy greens and cheeses with Middle Eastern spices. This looks divine and I must try it soon. Like all of Kellie’s recipes, it’s another nourishing meal that makes the healthy look decadent. She’s a flavour master.
Mexican Chilli Beans with Homemade Tortilla Chips from Elizabeth’s Kitchen Diary
How gorgeous is this? And I love that Elizabeth has made her tortillas from scratch. I must try it. These spicy kidney beans are livened up with lime, spice and fresh corriander. So spicy, fresh and veg-filled!
Pea and Feta Cheese Puffs by Tanusree at Ma Niche
These cheese puffs are adorble – and even better with peas! Such a great idea and I love the shapes. The cutest food, ever. Kids would never know that they’re filled with peas, but I would definitely serve these to adults, too – especially in animal shapes!

Spring Greens with Wild Rice by Lorna from Naturally Bee
First, what an amazing bee tea towel. I love it. And I love this salad, too. It’s iron-packed and full of goodness. It’s got rosemary, garlic oil and cashews – elevating it to super-salad status!

Zesty Courgette and Leek Soup by Katie at Feeding Boys and a Firefighter
That colour! Those veggies! This soup is like all the best of spring green come together to warm on a rainy May day. It looks amazing and is quick to make in a blender.

Baked Cauliflower Steaks with Miso and Sesame Dressing by Louise-Claire at Poppy and the Bees.
I absolutely adore baked cauliflower, but Louise-Claire has taken these to another level with this amazing dressing. As she says: ‘It’s freeeeking delicious!’. I trust her on this. Making it!

Cauliflower Rice and Jerk Sweet Potatoes with Coconut by Choclette at Tin and Thyme.
Cauliflower rice is such a great way to get extra vegetables instead of carbs, and this recipe sounds amazing with the jerk flavours and ginger and tamari and coconut and…oh goodness this sounds delicious!

Rhubarb and Earl Grey Tea Loaf by Mandy at SneakyVeg
It’s easy to forget that rhubarb is really a vegetable and here the delicious and seasonal rhubarb features in this glorious-sounding tea loaf. And not just any tea… earl grey – my favourite! Sneaky Veg is a blogger after my own heart – we make sure vegetables are everywhere – whether you know about it or not.
Kuku – Parsi Vegetable Omelette by Chef Mireille at The Schizo Chef
This looks like an omelette or fritatta, but oh no – it’s FILLED with cauliflower and amazing spices like turmeric and paprika. It sounds divine, particularly with the suggested accompaniment of crispy fried potatoes!
Spring Greens and Quinoa Salad by Laura at How to Cook Good Food
How beautiful is this salad?? Lovely quinoa and those flecks of spring radishes… swoon. I love peas and raw broccoli in a salad so this is right up my alley. A glorious homage to spring.
Simple Spinach Soup by Camilla at Fab Food 4 All
Healthy and tasty food doesn’t have to be expensive. Camilla shows how to make a nourishing, fat-free, vegan meal on a budget with this beautiful green spinach soup, topped with a sprinkling of nutmeg.
The Ultimate Beetroot Brownies with Coconut from Margot at Coffee and Vanilla
Chocolate, beets, coconut…. oh how lovely. These look great, and, as Margot says, her kids loved them, too. Beetroot and chocolate is no longer considered crazy and that makes me very very happy. I want these. Now.
Feta, Pepper and Courgette Filo Pie by Lucy at BakingQueen74
You’re with me on this, aren’t you. I know you are. We’re imagining the amazing crispiness of the base and those lovely spring veggies. I’m food swooning over this. As Lucy says, it would be great for a picnic!
Cheesy Roasted Butternut Squash Pasta Bake by Jen at Jen’s Food.
Loads of squash make the sauce for this pasta bake, and, to really pull my heart into it, Jen’s mentioned that it has a nice crispy top. I mean, that’s the best part of a pasta bake, isn’t it. Genius making the sauce filled with squash. I can just imagine the creaminess….
And….here’s a bonus recipe!
Purple Potato, Sweet Potato and Watercress Salad by Johanna at Green Gourmet Giraffe
How stunning are these colours? The bright purple is such a nice surprise in this salad, plus it’s then dressed up even more with a cashew dressing crammed full of flavours including limes from Johanna’s own tree (she’s in Australia!). What a lovely fresh treat from local farmer’s market ingredients.
