These avocado and lime ice lollies (popsicles) are creamy and flavourful. Avocado makes a great base for frozen desserts and pairs well with the tangy lime. Vegan and gluten-free.
The weather may have taken a turn for the worse of late (snow in the UK in May??), but in my head it’s summertime. That means BBQs, white wine and frozen treats/ice lollies/icy poles/popsicles – whatever you call them.
My vegetable drawer doth runeth over at the moment, and in it I have some particularly ripe and perfect avocados. Every morning so far this week I’ve started the day with delicious mashed avocado on toasted homemade herb bread and a mug of Earl Grey tea. Perfection.
Today’s recipe is for delicious, refreshing, creamy avocado and lime ice lollies – they have just a hint of lime. This can be made with any milk you like, skimmed or whole cow’s milk, make it vegan with rice, soya, or my personal favourite, almond milk.
