Cucumber and lemon popsicles are refreshing, zingy and perfect for summer. Like detox water in a frozen treat, they are delicious.
The days have grown hotter. Much hotter. We bask in a British heatwave and moan comfortably about the weather. Martha and the Vandellas’ ‘Heatwave’ soundtracks everyone like a cloak of Motown that adds a few degrees to the high temperatures, but lifts the spirits from sticky sweat to bopping hips.
Ice cream, ice lollies, icy poles, ice pops… we need to eat frozen things.
The shops are filled with sickly treats of frozen sugar. What looks like frozen cream is often frozen oil. Unappetising and unhealthy. We yearn for it but it only fills us with rubbish.
So I’ve made a frozen treat filled with goodness. Frozen salad on a stick. Pureed refreshing cucumber, with lemon juice and coconut water. It comes together in a frozen treat that rehydrates and tastes so fresh and summery.
- 1 cucumber, skin on
- Juice of ½ a lemon
- 1 tablespoon lemon zest
- 250ml (1 cup) coconut water
- 1 tablespoon agave nectar, honey or equivalent favourite sweetener
- Add all ingredients to a high-speed blender (I use a Froothie Optimum) and blitz until smooth. Pour into popsicle/ice lolly molds and freeze until solid.
- Alternatively, puree the cucumber with a hand held emersion blender until smooth. Mix with the other ingredients until well combined. Pour into popsicle/ice lolly molds and freeze until solid.
I made this recipe in my beloved Froothie 9400 high-speed blender. It’s more powerful than a Vitamix, Nutribullet or Blendtec and I use it daily. It blends everything in seconds and is really easy to clean. If you’re thinking of getting a super-blender, then check the Froothie Optimum 9400 out. I really do love mine.
