Carrot Cake Protein Balls

A quick and simple snack recipe that is great for kids and adults.
Recipe type: Snack
  • 1 carrot, peeled and grated
  • 75g (2/3 cup) rolled oats
  • 125g (1/2 cup) peanut butter
  • 3 tablespoons raisins
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • 3 tablespoons unsweetened shredded coconut, for rolling
  1. Add all ingredients except the shredded coconut to a bowl and combine. Roll into balls and then roll the balls in the shredded coconut. Store in the fridge or freezer.
