Grilled cucumbers? Yes! Marinating and grilling cucumbers on the barbecue makes them absolutely delicious. I’ve served them with a flavourful garlic and fresh dill dip.
I love springtime, when rains subside, nights grow ever longer, the flowers bloom and the warm evenings are heralded by the faint and welcome scent of neighbors barbecuing on charcoal.
But we can do better than meats and the usual vegetarian alternatives. In this quick recipe, I’ve cut the season’s best cucumbers into long ‘hot dog’ style spears, marinated them in olive oil and lemon juice while the coals heat and mixed together a garlic and fresh dill sauce. The cucumbers caramelise genltly on the barbecue and as the natural juices cook out, they take on a denser, more courgette/zucchini-like texture. The sauce gives the warm and slightly crispy cucumbers a burst of flavour, wrapped in a warm tortilla blanket.
We vegetarians are used to processed ‘meats’ on the barbecue, or fatty halloumi (which I LOVE!), but I’m sure anyone would be delighted with this alternative, where you get the excitement of grilled food, but also get a portion of veg. Use soya yogurt for the dip and this is a great barbecue treat for vegans, who too often are consigned to the salad bowl.
