There’s something so irresistible about homemade roasted nuts. The huge flavours permeate the air as they roast and you can tweak all the flavours to your liking.
Nuts are lovely on their own, but roasted with herbs and spices? BOOM – crunchy amazingness.
The only sad thing as I write this is that I don’t have any left to nibble at as I type. I really must make amends to that tomorrow and whip up another batch.
Luckily, this spiced nuts recipe only take 20 minutes to make, and they’re super easy.
There are some pretty incredible flavours all at work in these spiced roasted nuts. I’ve tweaked the recipe many times and this is my ultimate blend of sweet/savoury/umami/spicy/salty and simply mind-blowing deliciousness.
The candied nuts cool down to become crunchy little flavour bombs.
You will need:
mixed raw unsalted nuts
mixed raw unsalted seeds
- These nuts have just a little heat. If you like things spicy then add a little extra cayenne.
- Use your favourite nuts – cashews, pecans, walnuts, hazelnuts etc…
- Use any seeds you like, pumpkin, sesame, chia, flax etc…
- These candied nuts should last for up to 2 weeks in an airtight container.
- Make it vegan: this recipe is naturally vegan.
- Make it gluten free: use tamari instead of soy sauce.

How to make Rosemary Maple Spiced Roasted Nuts – Step by Step Tutorial
Step 1: Stir the oil, maple syrup, soy sauce, rosemary, spices and salt together in a large bowl.
Step 2: Add the nuts and seeds and mix well.
Step 3: Spread the coated nuts onto the prepared baking tray and bake for 18-20 minutes, stirring occasionally, until slightly darker and toasted.
Step 4: Leave to cool on the baking tray, stirring occasionally.
Step 5: Store in an airtight jar.

- 2 tbsp vegetable oil I used rapeseed oil
- 2 tbsp maple syrup
- 1 tablespoon soy sauce or tamari
- 2 tsp chopped fresh rosemary
- ½ teaspoon cayenne pepper
- ½ teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- ½ teaspoon salt
- 400 g (3 cups) mixed raw unsalted nuts
- 3 tbsp mixed raw unsalted seeds
- Preheat oven to 170C/325F. Line a baking tray with baking paper.
Stir the oil, maple syrup, soy sauce, rosemary, spices and salt together in a large bowl. Add the nuts and seeds and mix well.
- Spread the coated nuts onto the prepared baking tray and bake for 18-20 minutes, stirring occasionally, until slightly darker and toasted.
