Mindful Chef is a new British recipe box company set up by three friends, Giles, Myles and Rob. They have ‘a mission to make healthy eating easy and enjoyable’. All of their meals are gluten-free and can be prepared in 30 minutes or less. They fill the boxes with healthy ingredients and have loads of vegan options. The produce comes from family-run farms across the West Country, most of which are accredited organic by the Soil Association. The company also get their meat and fish from award-winning family farms that also supply Harrods and Fortnum & Mason.
Mindful Chef creates 8 new imaginative recipes each week that customers can cook at home. All you have to do is make your choice and they deliver all the fresh ingredients you need, plus an easy-to-follow recipe card. You don’t have to plan meals or go shopping and the packaging is eco-friendly and recyclable. The food is all portioned out so there’s no food waste.
An example of a week’s choices include:
Beef rendang with lemongrass, mangetout & brown rice
Basil pesto & chicken courgetti with sundried tomatoes
Moroccan chickpea & monkfish stew with sweet potato
Aubergine, tomato & butter bean ratatouille with asparagus (Vegan)
Creamy garlic mushroom & lentil ragu with sweet potato noodles (Vegan)
Mediterranean quinoa & bean burgers with avocado salsa (Vegan)
Roasted cauliflower & chickpea tikka masala with black rice (Vegan)
You can choose 2, 3, 4 or 5 of these recipes to be delivered to your door, complete with all the ingredients.
I’m a big fan of these recipe boxes. The whole concept of having portioned fresh ingredients being delivered each week has surged in popularity in the last year or two and it shows no sign of slowing down. I love that it expands your repertoire of recipes and you have no food waste. The boxes are usually very generous as well so you get lunch leftovers throughout the week.
I tried some lovely vegan recipes from Mindful Chef including:
Miso maple aubergine kebabs with red rice and edamame.
Roasted sweet potato, beetroot, sugar snap peas and buckwheat with almond butter dressing.
Coconut tofu curry with green beans and wild rice.
On busy nights it was great to just pick a bag from the fridge and in less than 30 minutes we had a delicious, nourishing, vegan meal on the table. My husband eats meat and he was completely satisfied by these meals and loved them as well. It’s definitely feel-good food.
