Chocolate Quinoa Bars Recipe

These one-bowl chocolate quinoa squares are really quick and easy to make. They're a great snack to cook with kids, plus they're filling and vegan.

Ingredients

  • 50 g puffed quinoa (or substitute puffed wheat or rice cereal)
  • 225 g oats
  • 100 g dark chocolate , chopped into chunks
  • 175 g maple syrup
  • 6 tbsp raisins
  • 5 tbsp coconut oil , melted
  • 3 tbsp desiccated coconut
  • 2 tbsp nut butter

Instructions

  • Preheat oven to 180C/350F. Line a 8x8’ square baking pan with baking paper.
  • In a large bowl, mix all ingredients together well.
  • Spread out into the prepared pan and pat down with the back of a spoon.
  • Bake for 15 minutes, then allow to cool slightly in the tray. Cut into bars and enjoy.
