This gin and tonic float is a fun way to turn a cocktail into dessert. Use your favourite gin and good quality ice cream for a decadent treat.

  • 3 oz gin
  • 4 oz tonic water
  • juice of 1/2 a lime
  • scoop of vanilla ice cream
  • to serve: slice of lime


  • Add the gin, tonic and lime juice to a tall glass, but don't fill to the top. Add a scoop of ice cream and serve. Once the ice cream is in it will fizz up and create a decadent creamy foam. Garnish with a slice of lime and enjoy (responsibly :) )
